Potato Vareniki

Potato vareniki are made by wrapping dough around a filling, which can vary but often includes ingredients like potatoes, cheese, or fruits.

The Dough Ingredients:
 3 cups Flour all purpose
 1 Egg
 1 cup Hot Water
 1 tsp Salt
 3 tbsp Oil Vegetable
The Staffing Ingredients:
 900 g Potato (boiled and smashed)
 200 g Onion Brawn or Spanish
 80 g Butter
 1 tsp Garlic Powder
 ½ tsp Pepper Black
To Serving:
 30 g Butter to serving
 50 g Sour Cream (optional to serving)

Firstly we should do the filling, because it should be totally cold.
Start from boiling the potato, and making mush.

In a skillet, melt the butter over medium heat.
Add the chopped onions and sauté until they become soft and golden.

Add the sautéing onions to the mashed potatoes, add garlic powder, and black pepper. Salt to teste.
Stir well to combine all the ingredients, allowing the flavours to meld together.
Let it cool completely.

Meanwhile , we can prepare the dough:
In a large mixing bowl, combine the sifted flour with oil and 1 cracked egg, with the wooden spoon.

Gradually add the hot water mixed with 1tsp salt while mixing the dough with a fork or wooden spoon until a sticky dough forms.
Let it cool a bit.

Knead the dough on a floured surface for about 5 minutes until it becomes smooth and elastic and not sticky, maybe you need more flour.
Shape the dough into a ball place the dough in a bowl, cover it with a clean kitchen towel, and let it rest for 30 minutes.

Shape and Fill the Vareniki:
Dust your work surface with flour and roll out the dough into a thin sheet, about 1/8 inch thick (3-4mm)

Use a round cookie cutter or a glass to cut out circles from the dough, approximately 3 inches (7-8cm) in diameter.

Place a spoonful of the cooled potato filling in the center of each dough circle.

Fold the dough over the filling, forming a half-moon shape, and press the edges firmly to seal.

Repeat this process until all the dough and filling are used.

Cook the Vareniki:
Bring a large pot of salted water to a boil.
Gently place the vareniki in the boiling water, ensuring they have enough space to move freely.

Cook the vareniki in batches for about 5-7 minutes or until they float to the surface.

Using a slotted spoon, carefully remove the cooked vareniki from the water and transfer them to a serving dish.

Serve and Enjoy:
Melt butter in a small saucepan or microwave.
Drizzle the melted butter over the cooked vareniki.
Optionally, serve the vareniki with a dollop of sour cream on top.
Serve the potato vareniki hot and enjoy their delicious flavours and comforting texture.
