Akroshka Russian Cold Soup

Main Ingredients:
 4 Cucumbers medium size (Diced, 400g)
 4 Boiled Potatoes (Boiled, about 500g)
 5 Boiled Eggs (Chopped)
 6 Radish Fresh Bunch (Shredded)
 300 g Bologna, ham, cooked chicken or corned beef (Diced)
 70 g Spring Onion (Finely chopped)
 30 g Dill Fresh (Finely chopped)
 200 g Sour Cream
 500 g Natural Yogurt
 1 tsp Salt + more to taste
 ½ tsp Black Pepper
 Water, Kvas, Sparkling water to serve okroshka to taste

Dice the cucumbers into small cubes.
Peel and dice the boiled potatoes into small cubes.
Peel and dice the boiled eggs into small cubes.
Wash and shred the radishes.
Dice the cooked ham or cooked chicken breast into bite-sized pieces.
Chop the fresh dill, finely chop the spring onions, add 1 tsp salt and shop with onions and dill.

In a large bowl or large pot, combine the diced cucumbers, diced potatoes, shredded radishes, chopped spring onions with dill, diced eggs, and diced ham or chicken.
Also you can leave a ham or chicken and make it vegetarian version.

Add sour cream, yogurt and mix it thought.
Season with salt and black pepper according to your taste preference.
Stir well to ensure the flavours are evenly distributed.

At this stage cover the bowl and refrigerate for at least 2 hours to allow the flavours to meld together and the soup to chill.

When it comes to serving, ladle the chilled Okroshka into the bowls, ensuring a generous portion of vegetables and protein in each serving.
Add cold water, or cold sparkling water, or kvas to desired consistency.
I like to add 1-2 tsp of vinegar 5% to a bowl, to more sour taste.
Also you can add some ice cubes.
Serve immediately and enjoy the refreshing flavours of Okroshka
