Italian stuffed spinach omelette is a popular dish that combines the delicious flavors of spinach and cheese with the versatility of an omelette.

Take a bowl, beat the egg whites and 1 whole egg. Then add salt, and pepper to taste. Add all the seasonings: chili and nutmeg. Add all cheeses.
Wash and roughly chop the spinach. Place it in the bowl. Whisk together.
In a frying pan, pour olive oil.
Then pour in the egg mixture. Reduce the heat to a minimum and cook covered for 6-7 minutes, until almost cooked.
At the last minute, flip the omelette using a plate and cook for another minute or two (you can skipp this step).
Serve immediately, hot.
