Fried sardines can be an excellent addition to a keto diet, as they are high in healthy fats and low in carbs. One serving of fried sardines contains less than 1 gram of carbs.

Rub sardines with a paper towel to remove any scales. Pat dry.
In a small bowl whisk minced garlic, lemon juice, pepper, and salt.
In a shallow bowl layer in sardines flat. Coat with marinade, and allow marinating for 30 minutes.
In a small bowl whisk 1 egg. Wash in egg mixture.
Heat the oil in a large non-stick frying pan over medium-high heat, dip each fish in the egg on both sides and layer the sardines on a frying pan.
Cook for 3 minutes, then flip the fish to the other side until lightly brown on each side.
Season with salt. Serve with lemon wedges.
