Eggplant Rolls with Cream Cheese is a delicious and nutritious dish that is a low-carbohydrate vegetable that can fit into a keto diet plan, also high in fibre.

Main Ingredients
 1 Eggplant Large (Thinly Sliced)
 125 g Cream Cheese (Room Temperature)
 125 g Ricotta
 1 Tomato Medium (Cut to Strips)
 ½ cup Parmesan Cheese (Grated)
 3 tbsp Olive Oil
 ¼ tsp Chilli Flakes
 2 tbsp Parsley (Chopped)
 ½ tsp Salt for Soaking +to taste

Thinly slice the eggplant lengthways and rub the pieces with salt. Let it sit for about 30 minutes.
It will help with reducing moisture and bitterness from them.
After passing time, place the eggplant in a colander and drain, then rinse and dry the eggplant with a paper towel.

Brush both sides of the eggplants with olive oil.

Preheat the grill pan and grill the eggplants for 3 minutes on each side until cooked through.

In a medium bowl mix together ricotta and cream cheese, 1 tbsp olive oil, finely chopped parsley, chili flakes, and some salt and pepper to taste.

Place on eggplants,1 strip of tomato, and a spoonful of cheese mixture at the base of each slice.
Then roll up and arrange on a serving platter.
Serve cold.
